Garam Masala

 

Ingredients

20                    Cardamom

1                       Cinnamon stick

12                     Cloves

1 ½ tbsp          Fennel seed

1                       Mace

1                       Star anise

1                       Bay leaf

¼                     Nutmeg

Heat a dry skillet or a pan over medium high heat. To that add all the above spices. Reduce the flame to low and toast them for 2 minutes or until all the ingredients have darkened slightly and give off a rich, toasty aroma comes out of it. Grind in a spice grinder or coffee grinder. Store in an airtight container away from heat.
