Ingredients

5                  Chicken drumsticks

2 tsp           Chili powder

1 tsp            Coriander powder

1 tsp            Garam masala

½ tsp          Turmeric powder

½ tsp          Ground black pepper

1 tbsp           Lemon juice

1 tbsp           Coconut oil

1 tsp             Ginger, garlic paste

1 sprig          Curry leaves

Water as needed

 

In a small bowl mix together all the ingredients to make a thick paste.

Marinate the chicken pieces with this and let it rest for 30 minutes.

Preheat the oven to 3750 F.

Line a baking pan with parchment paper or baking sheet. Place a wire rack on top and transfer the marinated chicken above that.

Bake for 25 minutes.

​

 After 25 minutes, turn to the other side and bake for 30 minutes or until the internal temperature is 1650 F using a meat thermometer.

CUrry leaves

CHICKEN

Ingredients

​

1 ½ kg                 Chicken, cut into medium size pieces

1 tsp                     Chili powder

½ tsp                   Turmeric powder

1 tsp                      Salt

2 cups                   Curry leaves

2 tbsp                    Crushed curry leaves

1 tbsp                     Coconut oil

1 tsp                       Ginger garlic paste (optional)

Cut chicken into medium size pieces. Wash and drain water.

In a pot add all the above ingredients.

​

Combine all well together until nice aroma of curry leaves comes out of it, for about 5 minutes.

​

Keep this aside for 30 minutes.

​

Turn on the flame on medium and cook chicken for about 25 minutes or until it is well cooked, stirring occasionally.
